Rhubarb Stew

Ingredients

 6 cups Chopped fresh rhubarb
 1 cup Sugar
 2 tbsp Water
 ½ tsp Cinnamon (optional)
 Vanilla ice cream

Directions

In a saucepan, combine the rhubarb, sugar, water and cinnamon

Simmer over low-medium heat for about 15 minutes, or until all the sugar has dissolved and the rhubarb has broken down

Stir the mixture continuously. The rhubarb stew is ready when the fruits have broken apart and start to form a thick sauce with small chunks of fruits

Let the stew cool and then serve on top of vanilla ice cream
