Apple & Maple Pork Chops

 1 tbsp Olive Oil
 4 (about 800g) Pork loin cutlets, trimmed
 1 Granny Smith Apple, cored and cut into thick wedges
 1 Red apple, cored and cut into thick wedges
 4 French shallots, peeled & quartered
 3 tsp Chopped fresh Thyme
 125 ml (1/2 cup) Boiling water
 60 ml (1/4 cup) Maple syrup
 ½ Massel style chicken stock cube, crumbled
 Mashed potato to serve
 Steamed green beans to serve

Begin by heating the oil in a large and deep frying pan over medium-high heat. Season the pork and place it in the pan. Cook it for approximately 5 minutes or until it is browned on one side, then flip it over.

Next, add the combination of apple, shallot, and thyme to the frying pan. Cook for another 5 minutes or until the pork is browned on the outside and almost cooked through. Once done, transfer the pork to a plate and cover it with foil to keep it warm.

Stir water, maple syrup, and stock into apple mixture and cook until sauce thickens, return pork to the pan and cook for 2 minutes, then serve the pork and apple mixture with mash and beans. Enjoy with ‘The Moocher’ Mourvèdre
