Winemaker's Notes In every group of barrels there are those that are better. Sometimes the reasons are clear, perhaps newer or better cooperage, often though the reasons are more difficult to understand. Embracing the esoteric nature of ‘elevage’ the art of maturing or ‘raising’ a wine we have selected a few very special vessels to create this outstanding wine - a truly great Saperavi.
Drink Inbuilt distance - 5-10 years should reward.
Bouquet Molasses, cherry wood, baked raspberries, tar, rosebuds, and spice; cumin, cardamom, and cinnamon quills.
Palate Tremendous poise between fruit weight and tannin; fruit rich and yet somehow savoury at the same time. Loads of tart cherries and cherry wood. Tobacco pouch. Earthiness.
