'Ancient Earth' Tasting Notes

Vintage 2018
Winemaker's Notes An assembly of excellent parcels sourced from a broad cross-section of McLaren Vale to create a regional expression of Shiraz. In contrast to the Black Bloods that highlight sub-regions, Ancient Earth aims to target the highest quality subregions across the entire area and blend them into a seamless representation of what the Vale does best.
Drink Cellaring is a requirement here – big wines take time. Leave this one to mature for 2-8 years.
Bouquet Blackberry and briar rose laid over tar, thyme, and iron. Violets, vanilla, liquorice, and roast beets.
Palate The structural palate showcases a selection of spice; caraway, cumin, cardamom, and black pepper. Plush, earthy, and unearthly.
Food Match Garlic butter roast portobello mushrooms with polenta, or Herb-crusted top loin beef roast with all the sides.
Analysis TA: 6.6 g/L, pH: 3.55, ALC: 15.1%, RS: <2.5g/L
